Menu for the Week: Feb. 22 - Feb. 28

Teriyaki Meatballs (I will make them meatless)

Meatballs in Cream Sauce (I will make them meatless)

Crawfish Etouffee & Gumbo and King Cake for dessert (we aren't Catholic, but we lived in Louisiana years ago and continue to celebrate the holiday anyway

Soft Tacos w/homemade tortillas, refried beans, etc. (no meat)

White bean chili (without the chicken)

Sandra's sweet and sour beans & cornbread (I am not sure whether I will make these without meat or not)

Red beans and Rice (these might be meatless)

We have felt much better eating lots of meatless meals. I feel full but not heavy. We are going to have meat on Tuesday because of Mardi Gras, but will probably have meatless another day to make up for it. We have been pretty good most days sticking to the weekday vegetarian and eat meat on weekends. This weekend no one seemed to care whether I made something with meat or not, so I think we are getting used to it. Long term, after this month challenge, I think that we may do 3-4 meatless meals a week or limit our meat consumption to between 1-2 lbs for the entire family for the week and not separate the weekdays from the weekends.

With meat consumption coming close to 200 lbs per person per year, having the 3 of us eat 50-100 lbs for the entire family for the year sounds pretty good.

It changes each time I make them, but I put some pecans or walnuts (1.4 - 1/2 cup) in the food processor and grind them up, then add some oregano, basil, garlic powder, onion powder, salt, pepper and pulse for a short time. I take it out of the food processor and put it into a bowl. Then I take cooked white or brown rice, about 2 cups, and I put this in the food processor separately by itself and pulse it just to get the grains a little smaller. I put it into the bowl with the nuts and spices. I usually add a little oatmeal or Parmesan cheese or other shredded cheese in and then mix. Then I add 2 eggs and mix it by hand and shape into balls. I fry them in a little oil until they start to brown and then I bake them for about 15 minutes. My family couldn't even tell there were nuts in them, but they love them. This has been a pleasant surprise to find a recipe that is meatless that is so well liked. If I have a little bit of onion or green pepper I may add it in the future or maybe some cayenne pepper to give it a little kick. Sometimes people use beans, but I haven't tried that yet. I may try it with barley instead of rice to see how it works out.
