Recipe for Homemade Carmel Corn - Yum!

We were invited to a movie at a friend's house tonight, and I was trying to figure out what to bring.  I remembered that I had this recipe from when I was first married, and we really like it.  I thought it would be great to bring while watching a movie!  The recipe is from my friend, Sally, who's mom made it every Christmas.


CARAMEL CORN

1 c. butter                                                         ½ tsp. soda
2 c. dk. Brown sugar                                        1 tsp. vanilla
½ c. light Karo                                                 6 quarts popped popcorn (use less)
1 tsp. salt                                                          peanuts-optional (have never tried)

Melt butter; add sugar, syrup, and salt.  Bring to a boil stirring constantly.  Boil without stirring for 5 minutes.  Remove from heat and add soda and vanilla.  Add peanuts at this time if you wish.  Pour over popped corn, mixing well. Bake at 200 for 1 hour.  Stir every 15 minutes while baking.

  1. My kids love carmel corn. I will have to try this recipe and make a batch for family movie night. It is sure to be a hit.
