Pita Bread

I got this recipe from a cookbook a few years ago.  I think it was from a Wheat Montana cookbook, but I don't remember for sure.  It is definitely a keeper.

1 1/8 cups water
1 Tablespoon oil
1 tsp. salt
1 1/2 tsp. sugar
1 1.2 tsp. yeast

3 cups flour (about) - white tastes best, but you can use whole wheat or a combination

Put the flour in last and only use as much as you need so it doesn't get too dry.

Mix ingredients.  Let sit for 10 minutes.  Roll out flat into pitas.  Let rise for 30 minutes.  Bake at 500 degrees for 4-5 minutes.  (until puffed up and tops begin to brown)

I usually bake at 450 for about 3-4 minutes on each side in my oven.  I never look at the directions, just the ingredients, so I didn't realize I did it differently!

I usually double the recipe and freeze some for later.  It makes about 5 per recipe.

    1. I have tried it with part wheat. It doesn’t puff up as well, but tastes great.

  2. Laurie,

I have tried this with whole wheat and it works well. It tastes best fresh.
