This shortbread recipe is easy to make. It is much easier than making sugar cookies because it uses only 4 ingredients: flour, sugar, butter and vanilla. I make some icing to go on top and sprinkled some sugar dyed with red food coloring. The recipe makes 2 1/2 large cookies or 3-4 medium sized cookies.
Recipe:
1/2 cup flour
4 Tablespoons or 1/4 cup butter (real butter, not margarine)
1/4 teaspoon vanilla
2 Tablespoons white sugar
Measure and mix the four ingredients above. Roll onto a cookie sheet covered with parchment or that is well greased. I actually cut the cookies out right onto the parchment/pan. That way you don't have to move it before cooking. it makes the process much easier.
Bake at 325 degrees for around 18-20 minutes, depending on how hot your oven is.
I personally like my shortbread plain, but if you like frosting on yours use the following recipe.
Frosting:
1/2 cup powdered sugar
1 Tablespoon softened butter
Between 2-3 teaspoons milk
A few drops of vanilla
Mix together frosting ingredients. Add only as much milk as you need for the consistency that you want. Color with a few drops of red or pink dye if you are interested. Spread frosting on the cookies and enjoy! I also dyed white sugar with red food coloring and sprinkled it on top. If you don't have sprinkles at home, it is easy to do. I usually use a paper or plastic up because of the dye.
