February Cooking for 2: Make It Your Way Quiche



I didn't feel like spending a lot of time cooking in the kitchen today.  I had some biscuits in the freezer, and thought that I would try making a quick quiche with them instead of a crust.  You could even make it without a crust if you wanted.  Use what you have and experiment.  Bread or rolls might work as well or even English Muffins.  Be creative!  

I broke up the biscuits into small pieces and put them into a well greased small casserole dish.  I sprinkled some cheese on top and mixed it a bit.  I used a cheddar mix, but you can use any kind of cheese you want to use.  I also cooked some deer sausage that a friend gave to us. Hopefully it will be good!  You could use bacon, ham, or whatever you think sounds good.  Remember, make it the way you want it.  Last, I mixed a couple of eggs (2-3) and about 1/4 cup of milk.  I added some salt and pepper and a little Cajun seasoning to it and poured it on top.  

This is a good dish to use up those extra bits and pieces left in the fridge like spinach, part of a pepper or onion, etc.  

Bake at 375 degrees for about 30-35 minutes or until done.  

Time to dig in!  Yum!!!
