Cooking with Food Storage: Pancake Mix

Making pancakes is a cinch with this homemade pancake mix. It stores well and uses multiple food storage items: whole wheat flour, white flour and powdered milk. If you used powdered eggs then this mix would only require water. 

Pancake Mix 
8 C. Flour (5 wheat and 3 white)
1½ C. powdered milk 
8 tsp. Baking powder 
4 tsp. Baking soda 
2 T. Salt 
5 T. sugar 

Mix all dry ingredients together and store in an airtight container. To make batter, use the ratio 1¼ cup mix to 1 egg and 1 C. water (and 1 T butter if desired but not necessary). Add more water or mix as needed to reach the desired consistency.
