I'm making one vegetarian dinner a week and this week I chose falafel. I've never made it before and was surprised how easy it was. A good food processor is required, but it wasn't nearly as involved as I expected because you don't even cook the garbanzos; you just soak them for at least 4 hours. We ate the falafel on salad and with hummus. It would also be delicious with some pita or flatbread. I LOVED the taste of these and would have eaten more if they hadn't bee devoured by the rest of the family. I will definitely double this recipe the next time I make it (and freeze leftovers, if there are any).
