Add Variety to Your Veggies Day 12: Avocado

My nephew reminds me that avocado is a fruit, not a vegetable. We're including it this month nonetheless because it's such a versatile, healthy food. I mashed up an avocado, spread it on toast, then added a fried egg on top. You could toast a bagel instead, or for a low-carb option combine egg and avocado with black beans and even salsa. Other possibilities are adding avocado to a grilled cheese sandwich, putting some into a smoothie, or these avocado tacos. It's hard to go wrong with avocado!
