Menu for the Week - Jan 16-22

Since I shopped without a list this week, I have to use whatever I have on hand to make meals this week.  Here is what I came up with:

White bean dip with pita bread and/veggies
Cream of Cauliflower soup
White bean soup of some kind
Turkey and Orzo Pilaf
Omelets
Homemade tomato soup or cream of tomato soup
Spaghetti with meatless meatballs

I am still looking for a good white bean recipe and tomato soup recipe. 

I will also make some soft pretzels, cinnamon swirl bread and whole wheat rolls.

  2. I tried a recipe a while back, but I am not sure which one. My family loved them. (I didn't tell them they didn't have meat until after they tried them.) I will probably just make one up with mostly rice, then bread crumbs, eggs, Parmesan cheese, parsley, oregano, garlic, etc. I may even put some chopped up onions and green peppers as long as my daughter can't tell they are in it. I may even put a little oatmeal, but I don't know. If they turn out well, I will let you know! My poor kids. Many times they didn't know what was really in their food. I like to experiment in the kitchen and hide things in food that are healthy. I remember some times at dinner offering to pay them if they could name everything in the recipe. I knew I was pretty safe making an offer like that!
