Menu for the Week: Feb. 1 - Feb. 7

Gumbo, salad - weekend
Garlic Mashed potatoes, Salad
Orzo Pilaf, Salad
Veggie Lasagna, Salad
Hummus w/pita, salad or veggies
Veggie Lo Mein - (use the recipe on the link but without chicken)
Baked Ziti, salad or veggies
Homemade soft tacos with refried beans instead of beef
Parmesan chicken, rice - weekend

This will give me a good variety to choose from and I will use some of the things for lunches.
