  4. I've got a recipe for you as well :) This is my little step-daughter's favorite meal - we make it vegetarian by upping the veggies and leaving out the beef!

    Beef & Potato Bake

    4 cups frozen hashbrowns (thawed)
    3 tbsp. vegetable oil
    ¼ tsp. pepper
    1 lb. ground beef
    1 package brown gravy mix (I use Sauer’s)
    1 cup water
    ½ tsp. garlic salt
    ½ package frozen corn
    1 cup shredded cheddar cheese (I use the 2% reduced-fat kind)
    1 cup French’s french-fried onions

    Preheat oven to 400 degrees. Thaw frozen hashbrowns in microwave (2-3 minutes at 80% power). Combine potatoes, oil, pepper in a casserole dish and form shell. Bake uncovered at 400 degrees for 15 minutes.

    Meanwhile, brown and drain beef. In a large skillet, combine beef, gravy mix, water, and garlic salt. Bring to a boil, add corn, then reduce heat to medium and cook for 5 minutes. Stir in ½ cup of the cheese and ½ cup of the french-fried onions.

    Place mixture in potato shell, reduce heat to 350 degrees and bake uncovered for 15 minutes.

    Sprinkle with remaining cheese and onions and bake for 5 more minutes or until the cheese is melted.
