Cooking with Food Storage: Baked Oatmeal


Yesterday's post was about traditional oatmeal. My kids prefer this variation on oatmeal. When warm, it tastes delicious with plain yogurt. Once it cools completely you can cut it up into squares or bars. I like how adaptable this recipe is too. I've added nutmeg, flax seed, nuts, pumpkin, chocolate chips, or canned peaches (though not all together!) for different options. 

Baked Oatmeal
3 cups rolled oats 
½ cup brown sugar 
2 teaspoons ground cinnamon 
2 teaspoons baking powder 
1 teaspoon salt 
¼ cup powdered milk
1 cup water
2 eggs 
½ cup melted butter or oil 
2 teaspoons vanilla extract 
¾ cup frozen fruit

Preheat oven to 350° F. Combine oats, brown sugar, cinnamon, baking powder, salt, and powdered milk. Beat in water, eggs, melted butter, and vanilla extract. Pour into greased 9x13 pan and bake for 30-40 minutes, till edges are brown and middle isn't gooey.
