How to incorporate beans into a dessert? Quite easily, thanks to the wealth of gluten-free food blogs. I was doubtful that this cake would taste very good, but wow. Wow. Gluten free certainly doesn't mean healthy in this case! My husband said he preferred this cake to regular cake. It is very crumbly but the texture is really moist and dense. Be sure to pulverize the chickpeas sufficiently for a creamy, smooth texture. I had a few larger chunks in my cake that didn't detract from the taste but were a little odd to feel in my mouth. I froze a few pieces and enjoyed eating them half-frozen pieces once I put kids to bed. It was a combination between ice cream and cake. Yum!
