Add Variety to Your Veggies- Day 3: Bell Peppers

Bell peppers are a staple in my house- I like to keep them in the fridge, chopped and ready to add to salads. One of my very favorite ways to eat bell peppers is in fajitas- I make this taco chicken using a silicone cooking mat on the grill- then cook peppers and onions in the leftover juices from the chicken. 

Today, I put the peppers and onions in with 1 cup of corn, 1/4 cup of salsa verde, 1 tomato and a can of black beans to make a 'fajita pepper salad'. It tasted delicious with the fajita chicken and the grilled corn.

Another recipe I love to make, but don't make very often, is stuffed peppers. Sometimes I'll get creative and use quinoa instead of rice, but I will usually follow the recipe so my kids and husband will eat them, too.
