Add Variety to Your Veggies Day 26: Yellow Squash

 

I love sneaking in vegetables any way possible. I've added yellow squash to zucchini bread, spaghetti sauce, and even scrambled eggs but this time I wanted to try it for dessert. I used this crust recipe and paired it with a custard filling. My kids could tell by the smell that this contained squash, so it wasn't completely hidden like I'd hoped, but they loved it. My son had 3 servings and would have eaten more if I'd let him. Even my pickiest eater finished hers.
