I tried beet fries with golden beets instead of a typical red beet. The taste is similar and I didn't end up with pink hands! I peeled and sliced the beets then tossed them with olive oil and Tony Chachere's, my favorite spice ever. Cook for about 30 minutes at 400°F or till your desired level of crispiness. This fry dip looks really good if you want something besides ketchup.
