I've seen cauliflower crusts at the grocery store but have never had the desire to try one. This month's theme of variety presented an opportunity to try something besides just steaming cauliflower. I made this homemade crust with no expectation of liking it; to my surprise, my whole family (including myself) loved it! The kids had seconds and thirds and requested that we have it for dinner another day. If I made it again, I would double the recipe and freeze one of the crusts. The process of preparing the cauliflower "rice" was more involved than I expected.
