Add Variety to your Veggies! Day 1: Potatoes

This month, we'll be highlighting a different vegetable every day, and trying out a new recipe. Today is russet potatoes. I LOVE potatoes, even though they aren't the most nutrient dense. Today I tried a new recipe, an adaptation of The Pioneer Woman's Hassleback Potatoes. I used 1/4 of the oil and butter, and they still are delicious! They did take a lot of time to make, but are good enough to satisfy a "potato chip" craving. They would be great with other seasonings and flavors. And, they look really cool, too. 

You can't go wrong with potatoes- potato salad, mashed, baked, twice baked, I haven't met a potato I didn't like. What is your favorite potato recipe?
