Three Quick Chicken Recipes for UNDER $1 Per Serving: 5 Minutes or Less Preparation!



In this post, we will share three different recipes you can throw together in 5 minutes or less.  They may not be screaming of health, but they are ok for a quick dinner.  Thanks to 'cream of" soups, you don't have to know anything about cooking to be able to make these dinners.  I am using Walmart's regular prices for the cost analysis.  There is a little bit of difference in taste between different brands of soups.  This time I tried the Signature brand cream soups.  I found them saltier than Campbell's.

Chicken and 3 Soup Rice

1 pound boneless chicken
Cream of Chicken
Cream of Celery
Cream of Mushroom

Rice

Heat oven to 375 degrees.  Put boneless chicken in the bottom of a 9 inch pan.  In a bowl, mix the UNDILUTED cans of cream of chicken, cream of celery and cream of mushroom.  Cover chicken with 3 soup mix.  Bake for 1 hour to 1 hour 15 minutes or until all of the chicken is cooked through.  Cover with foil if you wish.  When it is done, take it out of the oven and let it cool slightly.  Serve over cooked rice.

Cost:

Chicken:  $1.98
Cream of mushroom:  50 cents
Cream of chicken:  50 cents
Cream of celery:  50 cents

Rice:  29 cents

Cost for entire recipe:  $3.77
Servings:  4
Cost per Serving:  95 cents


Parmesan Chicken

1 lb. boneless chicken
1 cup Mayonnaise
1/2 cup Parmesan Cheese, grated
2 tsp. oregano

Rice

Place boneless chicken in an 8 or 9 inch square pan.  Mix together ingredients and spoon over chicken.  Bake 45 minutes at 375 or until chicken is cooked completely.  Serve over cooked rice.

Chicken:  $1.98
Mayonnaise:  66 cents
Parmesan Cheese:  59 cents
Oregano:  4 cents

Rice:  29 cents

Cost for whole recipe:  $3.56
Servings:  4
Cost per Serving:  89 cents


Chicken and Mushroom

1 pound boneless chicken
Cream of mushroom
Sour cream  8 oz.

Rice

Heat oven to 375 degrees.  Put boneless chicken in the bottom of a 9 inch pan.  In a bowl, mix the sour cream and cream of mushroom together.  Cover chicken with sour cream/cream of mushroom mix.  Bake at 375 for 1 hour to 1 hour and 15 minutes or until chicken is cooked.  You can use foil if you would like.  Remove from the oven and let cool slightly.  Serve over cooked rice.

You can also line your pan with dried beef, but that would increase the cost and kick you out of the $1 per serving.  You can also sprinkle a little bit of cheese on top the last 15 minutes of cooking and make it in your budget still.

You can even make all of these at the same time and cook them in the oven together.  Just make sure the chicken is cooked before taking it out of the oven.
