Marie Callender's Cornbread - Almost: Recipe and Cost Analysis



I got this recipe from a friend when my husband was in graduate school.  We have enjoyed it for several years and hope you will as well.

Original Recipe:

2 large eggs
1 cup whole milk
3/4 to 1 stick butter, softened but not melted
2 cups Bisquick
3/4 cup sugar
1/2 teaspoon baking soda
2-3 heaping Tablespoons Cornmeal

Because Bisquick is so pricey and I don't have it on hand, I changed the recipe a bit and it works just as well.

2 large eggs

3/4 cup sugar
1/2 teaspoon baking soda
2-3 heaping Tablespoons cornmeal
1/3 cup oil
1 Tablespoon baking powder
3/4 teaspoon salt
2 cups flour

Mix dry ingredients.  Then add wet ingredients and mix.  Grease an 8 or 9 inch square pan and put batter inside.  Bake at 350 for 35 minutes.  This falls easily so don't open the oven part way through!

Cost Analysis:

Oil - 11 cents
Margarine - 21 cents or butter 75 cents
Baking powder - 8 cents
Baking soda - 1 cent
Cornmeal - 12 cents
Sugar - 17 cents
Milk - 17 cents
Eggs - 24 cents
Flour - 21 cents
Salt - 1 cent

Total cost for the recipe:  $1.34
Servings:  9 generous
Cost per serving:  15 cents
