This week I am having easy meals since I have most of the ingredients on hand. By doing this, I was able to stock up on pasta and a few other items. As you can tell by my menu, I still have a lot of zucchini to use in recipes. I also have some homemade cheery pie filling from last summer that has been in the freezer and needs to be used. We have a lot of green beans, so we will be having Shepherd's pie. I will use the Costco chicken for salads and for one of our meals. I will freeze the rest of it in small bags to use in the future. What a great bargain! A cooked chicken for only $4.99. If I buy a lemon, I can also make some hummus and have it with homemade pita bread.
