Cooking for 2: Whole Wheat Chocolate Chip Cookies



Chocolate Chip Cookies – Makes 2 big or 4 small cookies
2 Tablespoons butter
1 Tablespoon sugar
1 Tablespoon + 1 tsp. brown sugar
1 Tablespoon whisked egg
1/8 tsp. vanilla
¼ cup + 1 tsp. whole wheat flour
1/8 tsp. salt
1/8 tsp. baking soda
¼ cup + 1 Tablespoon chocolate chips
Soften butter.  Add sugar and brown sugar and mix.  Add egg and vanilla and mix.  Add flour, salt, and baking soda and stir until mixed.  Add chocolate chips.  Bake at 325 degrees for about 17-18 minutes if you divide dough into two cookies.  If you divide the dough into 4 cookies, bake at 350 for about 10-12 minutes.  Enjoy!  (I like to bake my cookies on parchment paper because you don’t have to grease a pan and the clean up is much easier. 

Double Chocolate Chip Cookies – Makes 2 big
2 Tablespoons butter
3 Tablespoons sugar
1 Tablespoon whisked egg
¼ teaspoon vanilla
4 Tablespoons whole wheat flour
2 Tablespoons cocoa
Pinch of salt
Larger pinch of baking soda than salt
5 Tablespoons chocolate chips
Preheat oven to 375.  Soften butter.  Add sugar and mix.  Add Tablespoon of whisked egg and the vanilla and mix.  Add flour, cocoa, salt and baking soda.  Mix in dry ingredients.  Use your hands if necessary to get it all mixed well.  Add chocolate chips and mix.  Divide into two cookies.  Put a small piece of parchment paper on a cookie sheet.  Put cookies on top of the parchment paper and cook for 10 mintues at 375.  Don’t over cook.  Take cookies out of the oven and let them cool on the cookie sheet for 8 – 10 minutes before removing.  Enjoy!
