Special K Treats - A Version of Scotcheroos



Special K Treats
4 Cups Special K  cereal
½ Cup Karo syrup
½ Cup white sugar
¾ Cup Peanut butter (creamy)
2/3 Cup Chocolate Chips
2/3 Cup Butterscotch Chips

Directions:  Butter an 8x8 inch square pan.  Heat Karo and sugar until sugar melts.  Add peanut butter and mix.  Add 4 cups Special K until mixed well.  Spread in greased 8x8 pan.  Melt butterscotch and chocolate chips in small saucepan on very low heat until melted.  Pour over Special K mixture and spread evenly.  Cool until chocolate topping is firm.  Cut and eat!
Hints:  First of all, these sound very easy to make and they are.  But, if you let the sugar and Karo cook too long, you will have rock hard treats that will break your teeth.  You don’t want it to boil.  If you don’t cook it long enough, the treats won’t stay together.  Some people call these cookies Scotcheroos and use Rice Krispies in them.  You can use Rice Krispies instead of Special K if you want to.  I just use whatever I have at the time, but we prefer Special K.  When you melt the chocolate chips and butterscotch chips, they can burn very easily so use a very low heat and be patient.  I have tried cooking the on a higher heat before, and that is why I can tell you that they burn easily!
