Carol's Old Fashioned Chili

Carol's Old Fashioned Chili

1 lb. any colored bean
5 cups canned tomatoes
1 lb. green pepper
1 and 1/2 T. oil
1 and 1/2 lbs. chopped onion
2 cloves garlic
1/2 cup fresh parsley
1/2 cup butter
2 lbs. ground beef (have used less)
1/3 cup chili powder
2 T. salt
1 and 1/2 t. pepper
1 and 1/2 t. cumin

Soak beans over night.  Drain and then add 4 quarts cold water and simmer covered until beans are tender.  Saute green pepper in oil and then add onion and cook until tender.  Add garlic and parsley.  In a separate skillet brown ground beef.   Add meat to onion mixture, stir in chili powder and cook for 10 minutes.  Combine all ingredients including the spices and tomatoes in a large kettle and simmer covered for one hour, then uncovered for another 30 minutes.  Makes 1 and 1/2 gallons.
