We survived our first week of eating meat only on the weekends. It wasn't too bad. I just have a hard time thinking of meals that are meatless, so there will be some repeats from last week.

Veggie/cheese Pizza
Hummus & pita bread
Carib-beans
Broccoli Cheese Soup
Spinach, Ricotta and Portobello Gratins
Weekend:
Gumbo
Go out for Valentine's day on Saturday to be able to avoid crowds and to have the option of eating meat!
I hope my family will keep up being good sports this week. I tried to find some recipes with variety and mix them with ones that I know they will like. I won't make all of these, but I want to have the ingredients on hand to make any of them.
