I am just working on using a lot of leftovers this week that I froze from meals last week. A couple more days of meatless meals for the month and then we start a new monthly challenge. We have felt better when we have salads in the evening and not as much meat.

Curried lentils & rice
Meatless Spaghetti Pie
Soft tacos with refried black beans instead of meat
Cobb Salad without the meat
Church dinner - will bring a dessert
Potluck Dinner w/friends
