31 Days of Bread in July! Amy's favorite Muffins

I wasn't planning on making any muffins today, but my daughter dropped the hint that she would sure love to have her favorite muffins sometime.  This recipe is very versatile and you can put different kinds of berries or be creative and put what you want.  Chocolate chips might even work or even a streusel topping on them.  My favorite berry to use is blackberries, which I cut smaller since they are so big.  I had a request for blueberry muffins, so that is what I made.  My daughter thinks these taste like pound cake. 

Basic Muffins

2 eggs
1 cup sugar
1/2 cup oil
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda or baking powder
8 oz. sour cream
2 cups flour

Mix.  Add fruit of your choice.  Bake at 400 (I do 385 because I have a hot oven) until done, or about 18-20 minutes.
