Kristin's Carrot Cake - this is sooooo good!


2 cups sugar
2 cups flour + 3 Tablespoons
1 1/4 cups vegetable oil (I use canola)
4 eggs
3 cups grated carrots
1 tsp salt
3 tsp. cinnamon
1 tsp. vanilla
1 tsp baking soda
1 cup chopped nuts (optional)

Mix together sugar, flour, soda, salt and cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 45 minutes or until done.

Cream Cheese Icing

1/2 cup melted butter
1 8 oz. pkg. cream cheese
1 tsp. vanilla
1 lb. box of powdered sugar

Combine butter, cream cheese, and vanilla, mixing well. Gradually add sugar, beating until smooth.
