Kathryn's Casserole

1 pound ground beef
1 can (15 oz.) chili con carne
2 8 oz. cans tomato sauce
8-12 oz. regular corn chips (Fritos) divided
1 1/2 cups grated cheddar cheese
1 Tablespoon minced onion
1 can (13-15 oz.) mild enchilada sauce
1 cup sour cream
1 can (15 oz.)pinto beans (optional)

Saute ground beef. Add onions, chili con carne, enchilada sauce, tomato sauce and pinto beans. In 9x13 pan, place a layer of 2/3 of the corn chips. Top with meat-sauce mixture. Bake at 350 for 30 minutes. Mix together sour cream and grated cheese. Top casserole with sour cream-cheese mixture. Circle with corn chips. Bake an additional 5 minutes.
