30 Days of Beans in September: Buttermilk Pancakes

 

I used a blender to grind dry garbanzos into flour. Since the only flour I've ground before has been oat flour, this was new territory! The blender was so noisy that it frightened my baby but it pulverized the beans. I didn't sift the flour to remove what small pieces remained so it wasn't as fine as regular flour. I used a bit of this flour in wheat bread, but wanted to try it in a recipe with only chickpea flour to see how it differed. I was scrambling for a fast lunch today and decided to make pancakes with some leftover buttermilk. They weren't as fluffy as typical buttermilk pancakes but were still quite good and my kids liked them. Had I sifted the flour their texture would have been even better. I ate mine with almond butter and honey, a delicious way to go low-carb!
