30 Days of Beans in September: Black Bean Quinoa Salad


Tonight was Mexican food night in our house and I needed a side to go with the salsa chicken. This quinoa salad provided some healthy extra protein as well as using up the extra black beans in my fridge. I left out the cayenne pepper (to cater to kid palates) but highly recommend adding the cilantro. It was just the right touch for the dish. I plan to eat the leftovers in lettuce leaves tomorrow. Yum!
