Add Variety to your Veggies Day 24: Mushrooms


My children would probably start off by telling me that mushrooms are NOT truly vegetables. However, many of us aren't as worried about the technical definitions of things- so I'm just going to call it a vegetable anyways.

Mushrooms don't always look appetizing when they are cooked. One of my kids was about 2, had just started talking, and upon examining the veggie pizza I had made for dinner, pointed to the mushroom and asked "poop?" Of course, I love mushrooms. One of my favorite ways to eat them is in stroganoff.

This recipe outlines the steps to making a delicious Stroganoff. The Golden Mushroom soup really gets the taste. I will add Parmesan cheese or 2-4 ounces of cream cheese for the last 10-15 minutes of cooking to give it some extra creaminess. It tastes great on egg noodles, or baked potatoes.

Today when I made the Stroganoff recipe, I used ground beef instead of steak, and sauted 2 or 3 green bell peppers and threw them in. So, I call this "Cheesesteak Stroganoff".




My other favorite way of eating mushrooms is stuffed and grilled. Of course, I usually don't make them this way myself, I've only had them at restaurants and when we get together for big family dinners. Do you have a favorite mushroom recipe?
