Add Variety to your Veggies Day 16: Yams

 


My go-to way to cook yams is to cook them in my instant pot- check out this tutorial.

After I've pressure cooked the yams, they peel easily, and are soft enough to use as a pumpkin substitute in just about any pumpkin dessert, and it ends up tasting about the same. My daughter has been asking me if she could make a pie, so we used the yams to make a pie today. We followed this recipe

While making veggie desserts may not be the healthiest way to eat them, it is nice to have a little variety!
