Aunt Ruby's Pound Cake - Less Than 10 Cents Per Serving!



This pound cake recipe can be used with sauce or toppings or it is also really good eaten plain.  The recipe is from my husband's aunt Ruby.  My kids love this cake.  We usually use it in strawberry shortcake or for our favorite 4th of July dessert with a mix of cool whip and pudding on top and lots of berries.  You could also make it as a birthday cake, but it is a heavier cake like most pound cakes.  

1 cup margarine
5 eggs
1 tsp. vanilla
1 cup milk
3 cups sugar
1/2 cup cooking oil
3 1/2 cups flour

Preheat oven to 300. Melt Margarine and then cream together with sugar. Add eggs, 1 at a time, and beat well. Add cooking oil and vanilla. Add flour and milk gradually, beating well after each addition. Bake for 60-90 minutes in a 9 x 13 pan. Don't open oven while baking. Check after 1 hour with a sharp knife to see if it is clean or if batter is still wet. A crispy top is normal.

Margarine:  42 cents (Butter would be 1.49)

Vanilla: 3 cents for Imitation (Pure is 50 cents)
Milk:  19 cents
Sugar:  69 cents
Oil: 16 cents
Flour:  25 cents

Cost to make the whole recipe:  $2.29
Servings: 24
Cost per serving:  about 10 cents
