$50 Weekly Grocery Challenge: Spent $26.60 so far and Menu for the Week

Summer is finally here in Montana and I am back to spending $50 per week to feed us.  It is easier now that it is only my husband and I.

Here is the shopping we have done so far this week.  Because we are eating what we have in the fridge and freezer, I don't have to buy a lot.  I may choose to stock up on sale items or staples with the rest of the food money for the week.

I spent the following so far:

9 yogurts at 3/$1.00
Organic milk at $3.74
4 peaches for $2.26
Cottage cheese at $1.50
Almond milk for $3.99
2 Avocados at 99 cents each
2 lemons at 50 cents each
English cucumber for 99 cents
Organic brown eggs for $3.89
Organic bananas for $1.10
Organic carrots for $1.19
Organic quick oats in bulk for $1.07
Reduced produce (mostly oranges for fresh orange juice)  89 cents

Because it is warm, I find I don't want to be in a hot kitchen doing a lot of cooking with the oven on.  I have lots of leftovers in the freezer and some food leftover from when we had company last week.  I want to use it up to avoid waste and to save money as well.  Here is what I have planned for the week:

Breakfast - We will have fruit and may have yogurt with any one of the following breakfasts below.  Some of the breakfasts make enough to last for a couple of days, so we will have them twice or freeze any extras that won't be used this week.

Pancakes with Peanut butter and jam or homemade syrup

Scrambled eggs w/veggies or a slice of leftover cooked bacon from the freezer

Whole Wheat zucchini muffins made with honey, fruit and nuts.  The shredded zucchini is from our garden last year and was in the freezer and needs to be used.

Toast with peanut butter and jam or honey

Oatmeal with fruit and nuts - I would be happy to have this every day!

Lunch -  I have some leftover soups in the freezer that we will use for lunches this week.  We will also have salad and fruit.  It is a use it up week in our house.

Dinner - I want to do simple meals this week.  We will have salads most nights with some variety.  I also have some cooked chicken and pork in the freezer.  We will have tacos and sandwiches like pulled pork or tuna or chicken to go with the salads.  We may also have some spaghetti one or two nights with salad and bread. I would like to have baked potatoes or hash browns somewhere in the menu as well, but I need to buy potatoes if we do.
