Menu for the Week: May 15 - May 21

This week, I am going to make meals from the following:

Greek Spinach Feta Rice - making up the recipe
Kibbi (Arabic Meatballs)
Simply Pasta - an easy pasta dish I have yet to make up
Breakfast casserole
Tuna Potato Casserole (to use up some leftover evaporated milk)
French Toast
Sfeeha (Arabic meat pies)
Spaghetti with meatless meatballs (will use brown rice, nuts, eggs, bread crumbs and who knows what else)
Shepherd's Pie

I plan to make smaller portions of each of these that are enough for two people.  If they work out, they will be in a future cookbook or posted on the blog.
