Easy Peanut Butter Cookies

This is another attempt to use up stuff from our pantry.  I don't like peanut butter cookies, but my husband loves them.  I think they are too dry.  But, I had some crunchy peanut butter that no one wanted to eat, so I decided to make cookies.  I looked up some recipes and ended up just making up my own.  They are much more moist than regular peanut butter cookies.  I bet everyone will be happy and no one will complain about the crunchy peanut butter being gone!


Here is the recipe:

1 cup crunchy peanut butter
1 cup sugar (I used white, but next time I will try brown)
1 egg
1 tsp. vanilla
1/2 tsp baking soda
1 Tablespoon flour (I was afraid the dough was too sticky, but it probably would have worked without this)
I also put a pinch of salt in, but one of the recipes I looked at had you sprinkle salt on the top of the cookies instead.  So, I did both since I couldn't make up my mind.  Next time I will do one or the other.

Mix ingredients.  Roll into balls.  Bake on greased cookie sheet at 350 degrees for 10 minutes.  Let cool on try for a couple of minutes before removing onto cooling rack.
