Raspberry Almond Shortbread Thumbprints
I have had this recipe in my cookbook for months and haven't made it yet because I am trying not to make too many treats. But, I needed to make something for a holiday party and here was my chance. I think they look very festive. As for taste, I think they have way too much almond in them. I would substitute the almond in the cookie part for vanilla, and would skip or greatly reduce the almond in the frosting. The almond is so strong that it takes away from the shortbread and raspberry taste. If you love almond, you may not agree. They were very easy to make. I think I will try them again with huckleberry jam and substitute all the almond for vanilla.
