Fresh Yeast vs. Dry Yeast


(Please ignore my pictures being the wrong way. No matter what I do, it seems like they don't want to work out. One of these days I will get a new camera. Thanks for your patience until then. Maybe my kids can help me figure it out over Christmas break!)

Last night, a friend told me that she uses fresh yeast in her bread and that it works so much better. Since I make most of our bread, I thought I would give it a try. The first thing I noticed was that the smell of the yeast was very strong. The bread rose very nicely, and probably rose a bit faster than with dry yeast. I don't know much about the difference or benefits of using fresh yeast.

Do any of you have experience with fresh yeast? Do you like it better or worse? I would love to hear some feedback, since I am new to this!
