Halloween is around the corner, and here are a couple of our favorite pumpkin recipes we make with leftover pumpkins from Halloween.
PUMPKIN DESSERT
1 Package yellow cake mix 1 egg
½ Cup melted margarine
Take 1 cup of yellow cake mix and set aside. Mix remaining ingredients together and pat into bottom of cake pan.
2 Cups Pumpkin 2 Eggs
2 teaspoons Pumpkin pie Spice 2/3 Cup milk
½ Cup Brown Sugar
Beat until smooth and pour over crust.
1 cup dry cake mix 1 teaspoon cinnamon
¼ cup sugar ¼ cup margarine
Cut together until lumpy. Sprinkle over filling and bake at 350 for 45-50 minutes. Optional: Top with Cool Whip.
PUMPKIN CAKE
2 Cups flour 2 Cups Pumpkin
2 tsp. Baking Powder 1 Cup Vegetable Oil
1 tsp. Baking Soda 1 Cup Bran Cereal ( can use Wheaties, too)
½ tsp. Salt 1 Cup Chocolate Chips
1 ½ tsp. Cinnamon ¼ tsp. Ginger
½ tsp. Cloves 4 Eggs
¼ tsp. Allspice 2 Cups Sugar
In large mixing bowl, beat eggs until foamy. Add pumpkin, oil and bran cereal. Mix well. Add sifted dry ingredients, mixing only until combined. Stir in Chocolate chips and nuts. Spread evenly in a bundt pan or tube pan. Bake in 350 for about 1 hour and 10 minutes or until toothpick inserted in center comes out clean. 9x13 pan can be used. Cook for about 35-45 minutes or until done. I always use 9x13.
