What's for Dinner Tonight? Creamy Italian Mushroom Soup

I have a lot of vegetables to use up this week, so I am trying to think of ways to do this, and make a meal that my husband will like! My source of inspiration for this meal is Olive Garden's Chicken Gnocchi soup.

Here is what I needed to use up:
A few green onions
Mushrooms (abt. 1/2 lb)
Celery (1-2 stalks worth)

And here is what I added:

1 small chicken breast
2 potatoes, chopped
2 potatoes
3-4 T. Oil
1/4 c. flour
Margarine (1/4 c.)
Milk (3-5 cups? forgot to measure)
Salt and Pepper
About 2 T. dry italian dressing mix (just take from the dry ingredient mix from this recipe)

Cook the chicken breast and cut into small pieces. Saute/Fry the veggies in the oil until potatoes are soft enough to eat. Put into a separate bowl, then make a white sauce with the margarine, flour, and milk. Add the dry italian dressing spices, add veggies, then salt and pepper to taste. Then, eat like a soup or serve over rice.

Once again, this is one of my "I hope this works" recipes that helps me to use the food in my fridge so it doesn't spoil, and allows me to experiment in the kitchen. Luckily, this one turned out pretty good. I have yet to see if my husband likes it!

I bet it would taste incredible with a little italian sausage, and cheese. Maybe next time, if I ever have this combination of foods in my fridge again...
