I usually just write the main dishes I want to have and then cook them when I want to during the week instead of assigning them a day. Since there are only three of us left in the family, we will eat the leftovers of these meals for lunches during the week. We will also add fresh veggies and fruits to the meals.
White Chicken Chili (Doing a Name Brand vs. Store brand test on white beans)
Calzones - leftover in the freezer
Cajun Burgers - leftover in the freezer
Chicken, Simple Orzo Pilaf
Asian Salad - spinach from garden needs to be used
Pineapple Meatballs and Teriyaki Meatballs - elk that needs to be used in the freezer
Spinach Pies - leftover in the freezer
As you can see, most of my meals are from leftovers I have frozen from previous weeks or are things that need to be used up! It will be nice to try a few new recipes.
