31 Days of Bread in July! Apple-Oat Coffee Cake

This is a recipe that our family enjoys.  It isn't the typical coffee cake.  I think it tastes more like an oatmeal bar cookie, but we love it.  I substitute brown sugar instead of white in the recipe.  The recipe is from The Inn & Spa at Intercourse Village in Pennsylvania.  Usually I would just link to the recipe on bbonline.com, but it seems to be having problems for some reason.  I called the spa and got permission to put it on my website.

1 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 tsp allspice
1/4 teaspoon cinnamon
1 cup sugar (I use brown)
1 cup oats

Mix dry ingredients and then add:

1/2 cup oil

1 egg
1 teaspoon vanilla
1 cup peeled, chopped apple

Batter will be thick.  Put into greased 8x8 pan and bake at 350 for 35 minutes.
