100% Whole Wheat Oatmeal Chocolate Chip Muffins

Our family has made an Oatmeal Muffin recipe for years, but I decided to tweak it a little bit to make it healthier.  I use mini chocolate chips in mine since I can use a smaller amount than if I use regular chocolate chips.  You can also use blueberries or blackberries or raspberries or just make them plain.  We like them best when they are made with the chocolate chips.

1 cup Whole Wheat flour (fresh ground is best)
1 cup Oatmeal (I have used both quick or old fashioned - whatever you have on hand)
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder

Mix above dry ingredients and then add:

1/2 cup oil (I use canola)
1 cup buttermilk (real is best, but you can use milk and a little vinegar as a substitute if necessary)
1 egg

Mix in the wet ingredients and then add:

1/4 cup mini chocolate chips

Let the dough sit for about 5-10 minutes before putting into the muffin pans.  You can either use muffin liners or put the dough into greased muffin pans.

Bake at 385 degrees until done.  It usually takes about 15-20 minutes, depending on how hot your oven is.
