What's for Dinner Tonight? Spinach Pies, Calzones and Breadsticks
I tried to kill two birds with one stone today and made breadsticks for my daughter and used the same dough to make spinach pies and calzones. They will last for a couple of meals. I used a whole teaspoon of salt in the dough and substituted olive oil and parmesan cheese instead of butter and garlic or spices on the breadsticks. I just used what I had. The same dough worked perfectly for the spinach pies. I just rolled it out, cut it into squares, and put the filling on one half and folded it over to make a triangle and sealed the edges. The filling had cooked spinach ( I got a lot of frozen spinach for free from a friend), feta cheese, grilled onions and spices. I used allspice, salt, and pepper. I also put some fresh garlic in with the onions before they were finished browning. Finally, I put a little tahini with it. Follow the directions in the recipe after shaping or making into pies. With some of the same dough, I made calzones since I had pepperoni and cheese. They also turned out well. This recipe for bread sticks is a keeper!
