What's for Dinner Tonight?

I was going to make some corn chowder tonight since it has been cold, but I didn't feel like it so I am making a Mexican Chicken casserole.  I had some ingredients on hand and it is really easy.  I am using sour cream, cream of chicken and green salsa mixed together and put on boneless chicken breasts.  Cook in the oven until chicken is done and serve with rice or tortillas or you could even use noodles if you don't have either of those. 

Don't have green chili salsa?  Don't worry!  You can use green chilies, red salsa, enchilada sauce or whatever you have on hand that sounds good to you.  If you don't have sour cream, try using plain yogurt.  If you don't have cream of chicken, you could try it with cream of mushroom or another undiluted soup, but I like it best with cream of chicken.
