Cooking for 2: Chocolate Crinkles

2 teaspoons cocoa  (the ones above are dark because I used dark cocoa)
1 Tablespoon + 1 teaspoon sugar
1 Tablespoon whisked egg
1 Tablespoon butter, softened
1/8 teaspoon vanilla
2 Tablespoons + 2 teaspoons flour
1/8 teaspoon salt
1/8 teaspoon baking soda

1 Tablespoon powdered sugar (to roll cookie dough in after it is mixed)



Mix the following dry ingredients (cocoa, flour, salt, baking soda) together and set aside.  Note:  When using cocoa, you need to mix it with flour or sugar before adding it to the other ingredients.  In a different cereal-size bowl, soften butter in the microwave for about 12 seconds.  Add sugar and mix.  Add whisked egg and vanilla and mix.  Add dry ingredients to the butter mixture and mix.  Freeze  cookie dough for about 5 minutes since it will be a bit sticky.  Put the tablespoon of powdered sugar into a different bowl.  Take the cookie dough out of freezer and divide into four parts.  Roll each part into a ball and then roll into powdered sugar.  Put on a greased cookie sheet or a cookie sheet lined with parchment paper.  Bake at 350 for 10 minutes.  Makes 4 cookies.
