Peanut Butter Stir Fry...



I thought I would NEVER try making a noodle recipe with a peanut butter sauce for the rest of my life. Many years ago, I tried a peanut butter stir fry recipe from a book that had Miserly in the title, and it was the WORST, ABSOLUTELY WORST MEAL that I have ever made. It was so awful. It actually took me years to have the desire to be frugal after trying that. But, there is a difference between being a miser and being frugal, and there is a difference between cooking miserly and cooking frugally. I believe frugal cooking also tastes good. I am not willing to give up good taste to save money unless I was in a situation where I really had to for survival. If you ask any of my kids or my husband what the worst meal I have ever made, hands down it would peanut butter stir fry and I made it so long ago. The memory still haunts us. I made the double chocolate muffins yesterday and loved them, so when I saw this recipe today from the same person, I thought I would take a chance and try it. As my husband left the house, he reminded me that he isn't promising to eat any of it and that no one is forcing me to make it. If any one knows my husband, he is a good sport about trying anything. Well, I made half of the recipe just in case it was horrible, and as I put the ingredients in, I wondered if I should have listened to him. I didn't even make it with the chicken or veggies just in case it tasted bad. But, it tasted just fine. I liked it and was surprised that I did. Maybe I will serve it at our next family reunion! I would probably have to bribe the family to try it, after the last experience...
